She Cooks!

It's been several years (.1534 to be exact) since I've posted a recipe (that I recently made) for y'all.  I wish I could use y'all, but since I'm not an authentic southerner, like my friend, Big Red (no blog to post to because she doesn't have one), I'll just have to refrain from here on out.

This is a recipe that I brought into the Elsea marriage.  C has yet to bring any, but I have received some of his favorites from Mom E.  Come to think of it, C did have one contribution.  Back in the college years we ate lots and lots and lots of Raman Noodles (beef flavored only).  I made them the typical way (pour the seasoning packet into the noodles and 3 cups of water).  C preferred them another way (pour the seasoning packet onto the noodles with just a tad of water).  And we've I've been making them that way ever since (yes, we still eat Raman - it's sooo good).

Back to my contribution. C loves him some easy peasy Cheeseburger Pie.

Cheeseburger Pie













Here's what you'll need
1 lb. ground beef
1 large onion, chopped or diced, which ever you fancy. (This is 1 cup if you're like me and now use Kroger's pre chopped frozen onion.)
1/2 tsp. salt
1 cup shredded cheddar cheese
1/2 cup Bisquick mix
1 cup milk
2 eggs

Here's what you do

Preheat oven to 400 degrees (still don't know how to add that symbol and no one has offered to help) and grease a 9 inch pie plate.

In a skillet cook the beef and onion until the beef is brown.  Drain and add to the pie plate along with the salt.  Also sprinkle the cheese on top.

In a separate bowl combine the Bisquick, milk, and eggs, then poor over the meat and cheese.

Pop in the oven for 25-30 minutes.  You'll know it's done when you can poke a knife in the middle and it comes out clean.

Serve, if you're like me, with ketchup!
