Pasta Salad with Feta

I. Love. Pasta. Salad. I would eat it 24/7 if I could.  Aside from going to swim meets to see Mark, the second draw is the pasta salad.  No matter who makes it (so long as it's not an orange dressing) it's always delish.

Lately I've been making pasta salad for myself with whatever I've got around the house. Typically it's a few cups of pasta, carrots, broccoli (if available) and italian dressing.  Yum. Yum.

Every now and then I'll make real pasta salad.  Never for myself though, usually for a funeral dinner.  Here's the variation of what I made most recently.

Pasta Salad with Feta


What you'll need:
3 cups cooked tricolor rotini pasta
1 cup halved cherry tomatoes (not my thing, but a lot of others' thing)
1 cup chopped cucumber
1/4 cup red onion
1 cup of feta cheese
1/2 cup italian dressing

Combine cooked (al dente) pasta with all the lovely ingredients above and combine.  If you want to be like Ina (and who doesn't want to be like Ina? and this day I did) leave out the feta and add that last so it stays in it's nice little cubes.

Chill until ready to serve.  If you really want to make this per my instructions, make sure to chill the pasta salad (covered) on the back stoop.

Uhmmm, putting stuff on the stoop was so yesterday in 1974. Try 1944 or 54.
